You’ll find us at 30-A in Hauz Khas. This neighborhood is always full of energy, and we’ve been part of it for a while. At Asia Kitchen, we focus on getting the food out. The kitchen is small but we make it work. We’ve got a couple of stoves going all at once. It gets pretty warm in there, especially in July. The dining area is simple. We didn't go for anything too flashy with the decor. Just some tables and chairs that are easy to clean. Most people come here because they’re already in Hauz Khas for something else. We see a lot of the same faces every week. It’s a good feeling when you know what someone is going to order before they even sit down. We don’t have a big corporate office or anything like that. The boss is usually around, maybe sitting at the back table checking the receipts. We handle our own deliveries too. Sometimes the bike is out, sometimes it’s not. It’s just how a local business runs. We stay open pretty late because that’s when the area really wakes up. After we close, we spend an hour scrubbing everything down. Then we do it all over again the next day. No big mystery to it. The tiles in the entryway are a little chipped. We put a mat over them so it’s not a big deal. The fridge makes a humming noise, but we’re used to it.
