Arabian Delights

We’ve been running this spot in Defence Colony for a while now, right in the New 30 Market area. It’s not a huge place, just a simple kitchen and a few spots to sit if you don’t mind the heat. Every morning starts about the same, with me and my cousin getting the dough ready and checking if the meat we ordered actually showed up on time. The market gets really crowded around noon because of all the offices nearby, so we have to move fast. Sometimes the big oven we use for the bread gets a bit moody and takes longer to heat up, but we just deal with it as it happens. We don't do any of that fancy plating you see in the bigger restaurants. We just put the food on the plate and get it to the table. The walls could probably use a new coat of paint, but honestly, we’re usually too busy to think about it. Most people who come here are regulars who live around Def Col or work in the shops nearby. We know what they want before they even sit down. The street outside is always noisy with cars trying to park and people shouting, but inside it’s just the sound of the fans and the grill. We keep things pretty basic and just focus on making sure the food is hot and ready when someone asks for it. That's pretty much our whole day here.
