You can find Amcm Indo Restaurant Llp over at B 62 in O.I.A. Phase I. It’s right in the heart of the South Delhi industrial zone. Most of the people who come to see us are working in the nearby factories or offices. We have a fairly simple setup here. It’s not meant to be a luxury dining room, just a place for good food. The kitchen is the busiest part of the building. We spend most of our time there, prepping ingredients and getting things ready for the lunch rush. Since it’s an industrial area, the crowd is mostly regular workers. We know a lot of them by name now. The noise from the street can be a bit much sometimes, but we’re used to it. We don't have a big marketing team or anything like that. It’s just us and a few helpers making sure the plates are full. We deal with the heat of the ovens and the rush of the orders every day. Sometimes we forget to take a break ourselves. It’s a lot of physical work, standing on our feet for hours. But we like the routine of it. We keep things clean and functional. That's how we run things here in Okhla. No frills, just honest cooking for the local crowd. We enjoy the pace.
