Sidheshwar Fancy Dhosa is over in Nana Mava, right near the Nana Mava Chowk. If you are around Rajkot - 360005, you might have seen us near Madhur Caterers. Our main thing is the tawa. We spend hours standing in front of the heat, spreading the batter and making sure the edges get crispy. It is a local spot and nothing too formal. We have some basic seating where people can sit down while they wait for their order. The evening time is when it gets really busy. The lights at the chowk are bright and there is a lot of noise from the bikes passing by. We buy our vegetables every day from the local vendors to make sure the stuff we put inside the dhosa is okay. It is a family thing, so you will usually see one of us at the counter and someone else handling the orders. We don't have a big marketing plan or anything. We just opened up and started cooking because that is what we know how to do. Sometimes the power goes out for a bit and we have to use the lanterns, but the customers don't seem to mind much. It is just a regular part of life here in Rajkot. We stay open until late at night because that is when the hunger hits people the most. We just keep the stove going until it is finally time to go home.
