The kitchen starts early here at Parvati, specifically in the Krishnabaug Society area. By five in the morning, the stove is already on. We do tiffin services, so everything has to be packed and ready before the lunch rush starts. It’s a lot of chopping, stirring, and tasting. We use regular ingredients that you’d find in any home kitchen. Nothing fancy, just the stuff we grew up eating ourselves. Our hands usually smell like turmeric or onions by the end of the shift. It’s hard work standing on your feet all day, but we enjoy seeing the empty tiffins come back. It means people liked the food. We don’t have a big menu with a hundred items. We stick to what we know how to cook well. Some days the heat in the kitchen is almost too much, so we open all the windows to get a breeze from the society grounds. The neighbors know us by the smell of our tadka hitting the pan. It’s a small operation, mostly family and a couple of helpers who have been with us for years. We don't have a delivery fleet or a big website. It’s just us making meals for people who are too busy to cook for themselves. We try to keep things simple and honest. If the dal is a bit thick one day, it’s because that’s how it turned out. That’s just real cooking for you.
