This shop is located in Hinjawadi 8. Being in this part of town means we deal with a lot of office workers, especially during the lunch break. It gets really crowded around noon. We have to work fast to keep the line moving. It’s a lot of baking bread and chopping up vegetables every single morning. The smell of the herbs and cheese bread is something you never really get used to, but it’s not bad. We have a small crew here, mostly people who live a short bus ride away. The shop itself is pretty standard, nothing fancy. We have the usual tables and those hard chairs. People don't usually stay long; they just eat and head back to their desks. We see a lot of the same faces every day, which makes it feel a bit more friendly. Sometimes we run out of cookies by late afternoon because the tea-time crowd buys them all up. We try to keep things clean, but with so many people coming in and out, there's always a stray napkin or a crumb somewhere. It’s a busy life here in Hinjawadi. We just keep our heads down and keep making subs. The traffic outside can be a nightmare in the evenings, so we usually see a lull then as people rush to get home. The glass on the front counter gets fingerprints all over it, so we're constantly wiping it down. We don't have any big marketing slogans.
