Rolls Mania

We’re tucked away in Hadapsar, making rolls for whoever stops by. It’s a small operation, mostly focused on getting the wraps ready quickly for people on the go. Hadapsar is a big place, and we see a lot of commuters and folks living nearby. Our counter is usually busy with orders coming in through the phone and from people standing right there. We spend a lot of time chopping vegetables and preparing the meat or paneer fillings. The griddle is always hot. It’s not the kind of place where you’d sit for a long meal; it’s more of a grab-and-go kind of thing. We try to keep things organized, but when five orders come in at once, it gets a bit hectic. The staff is just a few of us who know how to work the line. We don’t use any special tricks, just fresh ingredients and a hot flatbread. People seem to like that they can get something decent to eat without waiting forever. We’ve been in this spot for a bit, and we’ve gotten to know the rhythms of the neighborhood. The lunch rush is always the loudest time. We just keep our heads down and keep rolling. It's practical food for a busy part of town, and that's exactly what we aim to be. Sometimes we run out of onions or greens late at night if the day was busier than we expected, and we have to make do or run to the local market.
