We are located in the Nigdi Warje Malwadi area, specifically at 41450. It’s a sweet shop, so we are dealing with a lot of milk, sugar, and nuts all day long. The morning starts very early because the milk delivery comes in before the sun is even up. I spend hours standing over the large pans, stirring things until they thicken up. It’s physical work and your arms get really tired after a while. The shop front has the glass displays where we put all the different mithai. I have to keep the glass clean because people are always pointing at what they want to buy. In Nigdi, people really like their sweets for festivals and even just for a Tuesday treat after work. We get a lot of regulars who come in for their favorites. Sometimes the floor gets a bit sticky from the syrup, so we have to mop it down several times a day to keep it clean. We don't use any fancy machines for most of the stuff, we just do it by hand like it’s always been done in the past. It's not a big glamorous operation, just a kitchen in the back and a counter in the front. I spend a lot of my time making sure the portions are even and everything is stored correctly so it doesn't spoil in the heat. It’s a lot of work to keep up with the demand, but we just take it one tray at a time and keep going.
