Down here at Deccan Gymkhana 1st Stage 1130, Harshu Veg is where we spend all our time. The building is a bit old and the paint might be peeling in a couple of corners, but the kitchen stays clean. We focus on vegetable dishes because that is what we know how to cook. Every morning starts with the vegetable truck arriving and us checking the bags of spinach and potatoes. If the cauliflower doesn't look good that day, we just don't make it. The tables are standard wooden ones and they’ve seen a lot of plates over the years. We have a lot of regulars from the Deccan area who come in and don't even look at the menu anymore. They just ask what's fresh. It gets really crowded during the lunch hour and the noise level goes up with people talking and spoons hitting the plates. We don’t have fancy uniforms or a big marketing plan. It’s just us serving food to people who are hungry. Sometimes the fans overhead make a clicking sound that we’ve been meaning to fix. The water glasses are mismatched sometimes because things break and we just buy what’s available. It feels like a home kitchen more than a business most days. We stay open until the last pot of dal is finished. It’s simple work but it keeps us busy. We mostly just talk about the news while we chop the cilantro.
