Gaurav Caterers is based in PMC Colony No 7, which sits along Shankarshet Road. If you know the area, we are right opposite the Railway Reservation Centre in Swargate. That part of town is always buzzing with people trying to catch trains or buses. We spend a lot of our time in the kitchen area, prep work starts while the city is still waking up. The smell of spices usually fills the space by eight in the morning. Being in a PMC Colony means we have a lot of neighbors around, and they are used to the sounds of big pots clanking and vans being loaded. Sometimes the traffic on Shankarshet Road makes it a real challenge to get our deliveries out on time, but we managed to figure out the back lanes over the years. Our setup is pretty simple. We have big stoves, heavy-duty counters, and plenty of storage for the ingredients we get from the local market. It’s not a quiet job, and it’s definitely not a clean one when we are in the middle of a big order. There’s always someone chopping something or washing up. We don’t have a flashy front office because most of our work happens in the back where the heat is. Swargate is a busy hub, and being right in the thick of it keeps us on our toes every single day. We just keep our heads down and cook.
