Working at Viman Nagar S/7 means we are always in the middle of a lot of activity. The dosa tawa stays hot for most of the day and there is always a bowl of chutney sitting nearby ready to be used. I remember when we first set up here, the space felt huge but now with all the equipment and the people coming in, it feels a lot smaller. We spend a lot of time grinding the batter and making sure the consistency is just right, which is harder than it sounds when the weather changes. Viman Nagar has a lot of office folks and students, so the pace is usually quite fast. We don't really have a menu with a hundred items, we just stick to what we know how to do. The floor gets a bit slippery from the steam and the spills but we mop it up as often as we can. It isn't a quiet place to sit and think, it's more of a place where you get your food and move on. The street outside S/7 is always packed with bikes and cars. Sometimes the electricity goes out and we have to scramble, but that’s just how it goes around here. We just show up, fire up the tawa, and start the day. It’s simple work but it keeps us going. Most people know us by our spot near the main gate.
