Brugge La Chocolaterie

We are tucked away at Dhole Patil Road, specifically Bodakdev 5. Most people find us because of the smell of cocoa that hangs around the entrance. It’s a lot of work back there in the kitchen area. My hands are usually stained with some kind of dark chocolate by noon. We spend a lot of time tempering and making sure the textures are right, which is harder than it looks when the humidity gets high. The shop itself is small. I spend a lot of my time arranging the display or wiping down the glass counters because fingerprints show up so easily. It’s just me and a couple of others most days. We get the shipments of beans and butter in the mornings and have to haul them inside before it gets too hot out on the street. Dhole Patil Road can get pretty jammed with traffic, so I usually hear the horns honking while I’m working on a batch. We don’t have a big team or anything, just enough people to keep things moving along. Sometimes a machine acts up and I have to spend an hour fixing it instead of making anything. That's just how it goes here. We aren't trying to be anything crazy, just a place where you can get some chocolate that was made right there behind the counter. It’s a simple routine and it keeps us busy enough from early morning until we finally lock up for the night.
