Being right by the Marble Market on the PashanBaner Link Road means we deal with a lot of dust from the street and the shops nearby. You can always see people walking over from the Shastrinagar area or stopping their cars because they are heading towards the airport side. It stays pretty busy from lunch until late at night. The floors are hard to keep clean with everyone coming in from the road, but we do our best with the mops every hour. We have several different counters going at once, so there is a constant sound of metal spoons hitting pans and people calling out order numbers. The seating area is just simple tables and chairs that get moved around constantly by big groups. Sometimes it gets a little smoky in here when the tandoor is running hot or someone is frying up a big batch of snacks. We have some fans going, but they mostly just move the warm air around. It is not a quiet place to sit, especially with the traffic noise right outside the door. We usually have a delivery bike or two parked right out front, sometimes blocking the way for others. Most days, we are just busy keeping the plates washed and making sure the water jars are full for the next person who sits down. It is a lot of fast-paced work and the kitchen stays pretty hot throughout the shift.
