Our place is located right on Airport Road in Dabolim Sancoale. It’s a busy spot because of all the planes coming in and out nearby. You can often hear the engines when things are quiet at night. We’ve been based here for some time now, focusing on the work that needs to get done for the flights. It’s a big building, quite functional and mostly designed to handle a lot of volume. We don't really have a lobby for visitors to sit in because we’re usually too busy moving things around. The staff comes from all over the Dabolim area and some even commute from further away. It’s a very practical environment. There isn’t much time for standing around chatting when the schedules are tight. We don’t put up a lot of posters or fancy decorations inside. It’s more about the stainless steel counters and the cooling units. The heat in Goa can be tough, especially being so close to the tarmac, so we have to keep everything strictly controlled. We’ve had to learn how to deal with the logistics of being near the airport, which isn’t always easy with the security and the traffic. It’s a job that requires a lot of attention to detail but we just take it one day at a time. It’s not a glamorous life, but it’s what we do here in Sancoale. We just keep our heads down and get the catering orders out as they come in.
