Our office is tucked away at 229, Katra Peran. If you know Tilak Bazar in Khari Baoli, you know how crowded and loud it gets. Being in the middle of the spice market means we’re always surrounded by the scent of black pepper and cardamom. It’s a historic part of the city, and our building has that old feel to it. We handle catering services from here, which means a lot of phone calls and planning menus on scrap paper. The streets are so narrow that getting supplies in and out can be a real headache sometimes. We usually have to use carts to move stuff to the main road. Our kitchen is where the real work happens, prepping for parties and events that happen all over. We don’t use a lot of fancy corporate talk because we’re too busy making sure the rice is cooked right and the curries are seasoned. Khari Baoli is a tough place to work if you don't like crowds, but it’s where all the good ingredients are found. We’ve been at this for a good bit now, and the routine stays mostly the same. Wake up, check the market prices, and start the prep work. Some days are longer than others, especially when there’s a big wedding on the calendar. We just keep our heads down and do the job as best as we can from this little corner of Tilak Bazar.
