We run Trio Caterers out of D-59 in Sector 50, Noida. It is a quiet residential neighborhood, which is a bit different from the busy markets nearby. Our place is mostly about the kitchen and the prep area. There is always a smell of something cooking, whether it is spices or just fresh bread. We spend a lot of our time handling large pots and making sure the vegetables are fresh from the market. It is hard work and the kitchen stays hot for most of the day. We have a small staff who have been with us for a while, and we all just know what needs to be done. We don't have a big fancy office for meetings; usually, we just talk to people over the phone or in the front area of our space. Noida Sector 50 is a nice spot, and we have gotten used to the rhythm of the place. Sometimes the delivery vans block the narrow street for a minute while we load up the food. We aren't looking to be some giant corporation. We just want to make sure the food is cooked right and arrives where it needs to go. There are days when everything is a bit chaotic with multiple orders, but we just put our heads down and work. It is a simple business based on cooking and feeding people, and that is all there is to it.
