Ya Gazi Caterers

Running Ya Gazi Caterers out of Mumbai Oshiya Corner in Katraj is a lot of logistics. We aren't a sit-down restaurant, so our life revolves around big pots, crates, and timing everything so the food arrives where it needs to go. It’s a bit of a juggle. We moved to this Katraj location because it gave us the room we needed for the big equipment. Most days, the floor is covered in vegetable crates and we’re busy marinating things for an event the next day. It’s a lot of physical labor. You’re standing on your feet for ten hours, making sure the biryani or the gravies are just right. We don’t use any fancy technology here, just old-fashioned cooking methods that we’ve used for years. Sometimes our families come in to help when there’s a really big wedding or a party to cover. It gets loud and there’s a lot of shouting back and forth to make sure nothing gets burned. We’ve been at Oshiya Corner for a while and the people around here know us by the smells coming from our kitchen. We don't really have a brochure or anything. People usually just find us by word of mouth or seeing our van driving around. It’s a busy life, and there isn't much time for breaks, but seeing the empty containers come back at the end of a job makes it feel like we did okay.
