Our kitchen is tucked away in the Dindoshi BMC Colony, right near Film City Road. Every morning starts long before the sun is up, usually with the sound of knives hitting cutting boards and the smell of spices being toasted. We aren't a fancy restaurant with waiters in bow ties. We are a catering crew that works out of a busy space filled with giant pots and industrial stoves. Because we are so close to Film City, things can get pretty hectic when there are big crews to feed. We spend our time peeling sacks of potatoes and making sure the rice is cooked just right. It gets very hot and humid in the kitchen, especially when all the burners are going at once. We don't have much time for sitting down. We load the food into vans and try to beat the Mumbai traffic to get everything delivered while it’s still hot. Sometimes we run out of ginger or a delivery is late, and everyone has to scramble. It’s a messy, loud, and very busy life. We just want to make sure the food tastes like something you would eat at home, nothing too oily or overly fancy. We use the same recipes we’ve used for years. It’s just us, the steam, and a lot of hungry people waiting for their lunch or dinner. By the time most people are waking up, we’ve already finished the first few batches of breakfast and are moving on to the lunch prep. The floor is always a bit slippery from the steam, so we have to be careful.
