Down here on S V Road in Marol, things move pretty fast. We’re right in Krishna Nagar. The kitchen starts getting warm early in the day. You can smell the onions frying from the sidewalk before we even open. We spend hours prep-ing the meat and the spices. It’s a lot of heavy lifting with the big metal pots. Our aprons are never clean for long. There’s always a bit of flour or sauce somewhere on them. The tables are simple wooden ones, and we wipe them down constantly throughout the shift. It gets crowded during lunch, and the noise of plates clinking is something you just get used to after a week. We don't have a menu with fancy photos or anything like that. We just tell people what we have ready on the stove. Sometimes the delivery guys are waiting in a line out the door. It’s a bit chaotic, but we manage to get through it. The ceiling fan wobbles a little when it’s on high, but it works fine for us. We’ve been in this part of Marol for a good bit of time now. People know where to find us. We don't do much advertising at all. The food is just what it is. We cook what we know and hope people like it. When the day ends, we’re tired and our feet ache, but we do it all again. It’s just how it goes here.
