We are over here in Lower Parel, right inside the old Albert Printing Works building on Senapati Bapat Marg. It’s an industrial estate, so there’s always something going on with trucks and people moving things around. Our spot is on the ground floor. It used to be just a print shop area, but we’ve turned it into a place where people can come and eat. We aren't doing anything fancy with a big lobby or anything like that. It’s mostly just us getting the food ready and making sure everyone gets what they ordered. The area gets really busy during the afternoon. People from the offices nearby walk down and it gets a bit noisy, but we like the energy. We’ve been at this for a while now, just trying to keep the kitchen running smooth. Some days are harder than others, especially when the rains hit Mumbai and the street outside gets messy. We spend a lot of time just managing the inventory and making sure the staff has what they need. It’s a lot of work being in Janata Industrial Estate because it’s an old-school part of the city. We don't have a giant team, just a few of us making sure things happen. If you find yourself walking near the printing works, you'll probably see our door. We just try to get the orders out and keep the space clean for the next person coming in.
