Working out of Vasavi Mahal Road in Dadar keeps us on our feet pretty much all the time. Our place at 40/41 is more of a workspace than a fancy office. There are always big pots being scrubbed and crates of vegetables being moved around. Dadar is such a central spot that we are always dealing with the rush of the markets nearby. We spend a lot of our mornings arguing with suppliers or checking the quality of the rice and oil that comes in. It is a loud environment, with a lot of shouting back and forth to get things done on schedule. We don't really have a place for people to sit down and eat; it’s all about getting the food ready and out the door to wherever the event is happening. Sometimes the vans get stuck in that nightmare Dadar traffic, and we’re all sitting here biting our nails hoping the food stays hot. The floor is usually a bit wet from the cleaning, and there is always a layer of steam in the air. We’ve been doing this for years, so we have a rhythm, even if it looks like chaos to someone walking in from the street. We don't have a polished website or anyone to handle fancy marketing. We just focus on the cooking and making sure the labels on the containers are correct. It’s hard work and it’s sweaty, but it is what we do every day.
