Our days usually start when most people are still asleep because there is always a lot of prep work to get through. The kitchen is the heart of everything we do. It is not a quiet place. There is always the sound of knives on cutting boards, water running, and people calling out to each other. We have got a small crew of folks who have been with us for a long time, and we all know how to stay out of each other’s way when it gets busy. We do not have a big front office or a sales team. If you want to talk to us, you usually have to catch us in between batches of cooking. We are not about the fluff or the fancy presentations. We just care about making sure the food is ready and it tastes like it should. Sometimes a burner goes out or a delivery driver gets lost, and we just have to deal with it and move on. That is the reality of this kind of work. We are not trying to be something we are not. We are just a local catering spot where people work hard every day to make sure others have something good to eat for their lunch or events.
