Working here at the 5th Cross in Bilekahalli keeps us busy all day. Most mornings start with the smell of the bread baking in the ovens. It is a very specific smell that fills up the whole shop in Chembur. We spend a lot of time cutting up onions, tomatoes, and peppers before the lunch crowd starts showing up. It is mostly people from the nearby offices looking for something quick. The counter gets pretty crowded around one o’clock. We just stand there and put the subs together one after another. Sometimes people are in a huge rush and they get a bit impatient if the line moves slowly. We try to keep the vegetables fresh and the cookies baked. There isn't much to it, just following the steps and making sure we don't run out of tuna or chicken. The floor needs a lot of mopping because people come in from the dusty street all the time. In the evenings, it gets a bit quieter and we have time to wipe down the glass and check the fridge temperatures. It is just a regular sandwich shop vibe. We see the same faces every week, mostly students or folks who live around the corner. It is a decent place to spend the day working and the commute isn't too bad either. We just keep things moving and make sure the ingredients are ready for the next day's rush.
