Subway

This Subway is located at Ghatkopar East 41495. It’s a busy part of the city and we see a lot of commuters coming through every day. Most of our time is spent prepping vegetables and baking the bread in the back. The smell of the bread usually fills up the whole shop by ten in the morning. It’s a small space, so things can feel a bit cramped when five or six people are waiting in line at the same time. We have a routine down for cleaning the counters and checking the temperature of the refrigerators. It’s not the most exciting work, but it keeps us on our toes. Sometimes the toaster oven acts up and we have to wait for the repairman to come all the way down here, which slows things down. Our staff is a mix of younger students and some older folks who have been in the food business for a long time. We try to keep the music low so people can hear each other. The floor needs a lot of mopping because of the foot traffic, especially during the monsoon season when everything gets wet and muddy. It’s just a regular shop where we do our best to get things right. People mostly come in for a quick lunch and then they are off to whatever else they have to do. We just keep the line moving and make sure all the ingredients stay fresh until we close the doors.
