Our shop is located at Girgaon 7. If you walk by, you’ll probably smell the bread baking because we do that several times a day. It’s a small storefront, and we don't have a lot of room behind the counter. Usually, there are two of us working, moving down the line to put together sandwiches as people tell us what they want. It gets pretty repetitive, reaching for the lettuce, the tomatoes, and the onions over and over. We have to keep an eye on the vegetable trays to make sure everything stays cold and hasn't gone soft. Sometimes the toaster oven acts a bit temperamental, but we know how to handle it. The morning shift involves a lot of prep work, like slicing deli meats and getting the dough ready for the ovens. Girgaon is a busy area, so we get a lot of people coming in for a quick lunch during their break. We don't have much space for sitting, so many people just take their food and go. We try to keep the glass clean, but it gets covered in fingerprints by the afternoon. It’s just a regular sandwich shop. We don't have a big corporate feel here; it’s more about just getting the orders right and keeping the floor swept. The days go by fast when there’s a line, and we focus on the next sandwich in front of us.
