Finding us isn't always easy if you aren't used to the Dawa Bazar area. We are on the third floor of Varjivandas Mansion on Shamaldas Gandhi Marg. It’s an old building, the kind with steep stairs and walls that have seen a lot of years. Being at number 60 means we are right in the thick of the Kalbadevi market chaos. It’s always loud outside with the porters and the traffic. Inside the restaurant, we are focused on the kitchen. The spices we use come from the markets right downstairs, so the air always smells like cumin and coriander. We don't have a big fancy entrance. You just have to come up to floor 3 and you’ll find us. The kitchen is small but we make it work. It gets very hot near the stoves, especially when we are doing lunch service. We mostly just keep our heads down and cook. The furniture is simple, nothing too modern or expensive. We’ve had to fix the plumbing a few times because these old buildings have their quirks. The staff is mostly guys who have been in the food business forever. They don't talk much, they just handle the orders. It’s a bit cramped when the lunch rush hits, but we manage to get the plates out. It's just a local spot in a busy part of Mumbai where we try to get things done right every day.
