You can find our fast food spot at number 19 in the Colaba Main Market. It is a very tight space, but that is common for this part of the city. Being right in the middle of the market means there is constant noise and people walking past our counter all day long. Our stove is right at the front, so the heat and the smell of the food go straight out onto the sidewalk. We do not have much room for people to sit, so most of our customers just stand or take their food with them. It is a fast-paced environment and we are usually pretty busy during the lunch hours. We start our day early by chopping up vegetables and getting the batters ready before the crowd starts to arrive. By the time it gets to the afternoon, the kitchen is really hot and we are just trying to keep up with the orders. We do not have a fancy menu; we just stick to the things we know how to make quickly and well. The floor gets a bit greasy by the end of the day, so we have to spend a lot of time scrubbing it down after we close. It is hard work and it is always noisy, but we like being in the center of the market. You see all sorts of people here every day.
