Raja Industrial Estate is where we spend most of our time. Specifically, we are on the ground floor, units 3 and 4. It’s a bit of a maze back here on P K Road, but if you find the Indraprasth Shopping Centre in Mulund West, you are pretty close. We are Sai Kripa Foods Services Pvt Ltd. The kitchen gets really hot in the afternoons, especially when all the burners are going at once. We handle a lot of food here, mostly getting things ready for deliveries or big orders. There is always the sound of knives hitting cutting boards and the smell of spices in the air. We’ve got a good crew of people who have been with us for a while. They know the routine. We start early while the air is still a bit cool. Being in an industrial estate means there are always trucks moving around and people shouting, but we just focus on the pots and pans. It’s not a fancy place with waiters or menus on the wall. It’s just where the work happens. Sometimes the floor gets a bit slippery from the cleaning, so we have to watch our step. We try to keep things organized but it gets messy when we are busy. That’s just the way a food business is. We’ve been at this address in Mulund for a good while and the neighbors know us. It is hard work but it keeps us going.
