Relax Kitchen

Relax Kitchen is located here in Mumbai. We don't have a very big setup just a simple kitchen where we spend most of our waking hours every day. It is located in a part of the city that stays busy from dawn until way past midnight. We named it Relax Kitchen but honestly it is usually anything but relaxing inside when we are trying to get the food ready for the rush. There is always something boiling or frying and the air is full of different smells from the spices we use. We don't have any fancy signs or big advertisements to bring people in. People usually find out about us from their neighbors or just by walking past the open door. The walls could use a new coat of paint and the floor has some permanent scuffs from all the moving around we do. We have a few old chairs for people to sit on while they wait for their food to be packed. We do all the work ourselves from buying the grains to scrubbing the heavy pans at the end of the shift. Mumbai is a tough place to run a small business but we manage to keep going day after day. We don't have a big philosophy or a grand plan. We just show up and start the stove and wait for the first person of the day to walk in. It is a basic way to live but it works for us and we plan to stay right here.
