Raju Sandwich Stall

You can find us over at Church Gate CP Tank. It is just a small stall on the street. I have been standing in this same spot for a long time. The mornings are spent mostly cutting up vegetables. I go through a lot of cucumbers, tomatoes, and boiled potatoes every single day. My hands usually smell like coriander and onions by the time I go home. It gets very crowded around here because of the station and the offices nearby. People are always in a rush and they want their food right away. I don't have a lot of space to work with, just my small table and the toaster. The noise of the buses and cars is constant. Sometimes it's hard to hear what the customers are ordering over the traffic. We keep the bread loaves stacked up high in the back area of the stall. I use a lot of butter and my homemade chutney. It's not a restaurant where you can sit down and relax. Most people just stand on the pavement or lean against the wall while they eat their snack. The sun hits the stall directly in the afternoons, so it gets quite hot under the umbrella. I don't have any staff, it's just me and sometimes my brother helps when he's around. We just try to keep the line moving and feed whoever comes by.
