If you ever find yourself over near Juhu Government Industrial Estate 77, you might see our place. We go by Rajasthan Pav Bhaji. It’s mostly just us working the big flat pans and getting the bhaji ready for whoever shows up. Being in an industrial estate means we get a lot of workers during their breaks and then families later on. The smell of butter and pav is always in the air around here. We don’t have any big signs or fancy lights, just the food. Sometimes the stove acts up or the delivery truck for the bread is late, which can be a bit of a headache. But usually, we manage. It’s a small operation, really. We spend a lot of time mashing the vegetables until they’re just right. Everyone has their own way of liking it, more spice or less butter, and we try to remember those little things. Juhu is a fast-moving part of town, and things are always changing, but we’ve stayed right here at number 77. It gets a bit smoky when the heat is high, but that is part of the job. We don’t think about it much. We just start the day, chop the onions, and wait for the first person to get hungry. It’s honest work and keeps us busy. We aren't trying to be anything we’re not. Just a place to sit for a minute and eat.
