Working at Pop & Dine in Goregaon West 25 is a bit of a whirlwind most days. The space is not very large, so we have to be really organized with how we set up the tables and the kitchen. We start around ten in the morning, getting the onions chopped and the sauces simmered before the lunch crowd shows up. The street outside Goregaon West 25 is usually packed with people, and that noise spills inside whenever someone opens the door. We have a small menu because we don't have the room to store a lot of different ingredients. The dishes get piled up quickly in the back, and someone is always assigned to just keep the sink clear so we don't run out of clean plates. It gets pretty hot in the kitchen area, especially when the stove is going full blast. We have a few fans running, but they mostly just move the warm air around. The customers are usually locals who live in the nearby buildings or people working in the small shops around us. We don't have fancy uniforms, just some aprons that have seen better days. Sometimes a delivery driver gets lost and we have to step outside to wave them down. It’s a bit chaotic during the peak hours, but we managed to get through it every day. Once the dinner rush ends, we spend an hour scrubbing the floors and prep surfaces for the next morning.
