Fort is always moving, and inside Kapadia Industrial Estate, things don't really slow down much. Pancham Puriwala has been sitting here for a while now, right in the middle of all that noise and bustle. The kitchen stays hot because the oil is almost always going. You get used to the smell of frying dough after the first hour of work. It’s a simple setup. We have the tables wiped down and the stools ready for whoever walks in. Most of our regulars are people working in the nearby offices or the workshops in the estate. They don't want anything complicated, just a plate of food that tastes like it should. We spend a lot of time just prepping everything by hand, chopping vegetables, kneading the dough, and making sure the spice containers are full. It’s not some quiet, peaceful place to sit. It’s loud, and sometimes you have to shout a bit over the fans to be heard. We don't have fancy menus or decorations on the walls. It’s just us and the food we make every day. When the lunch rush hits, it’s a bit of a scramble to keep up with the orders, but we manage somehow. By the time we start cleaning up, the sun is usually starting to go down over the industrial buildings outside. It’s a long day, every day, but that’s just how the business works in this part of town.
