Running Kirtis Fast Food here in Goregaon West is a lot of hard work every single day. We are right in the middle of a very busy patch, so there is never really a quiet moment from morning to night. The kitchen is small and gets very hot when we have all the burners going at once during the dinner rush. We make things like noodles and sandwiches mostly. It’s the kind of stuff people want when they are tired and just want to eat something quickly before going home to sleep. I do most of the chopping myself in the afternoons before the crowd starts coming in. Sometimes we run out of bread or fresh vegetables if the delivery boy is late, and then we have to tell people no. It feels bad but that is just how it is sometimes. We aren't a big chain, just a local spot where you can get a plate of food for a decent price. The floor gets a bit messy during the rush but we scrub it down every single night before we lock up. It's just me and a couple of boys from the neighborhood working here. We don't have a fancy menu card, just the items written on a chalkboard. People know what they like and they keep coming back for it. We just try to keep the food hot and the service moving as fast as we can. It’s a living.
