Khyber Restaurant has been at this spot in Fort for a long time. We are right on Mahatma Gandhi Road, inside the David Sasoon Building. If you know Mumbai, you know Kala Ghoda is always buzzing. We are on the ground floor, Plot 143. It’s an old building with a lot of character, and we try to keep things running smoothly despite the age of the place. The ceilings are high and the walls are thick. Every day we see all sorts of people walking past the entrance, from tourists to office workers. We don't spend money on fancy talk. We just focus on the kitchen and making sure the tables are set. It’s a lot of work keeping a place like this going in such a busy part of the city. The traffic outside never really stops. We start early, getting the ingredients in from the market before the roads get blocked up. The staff here has been around for a bit, and we all know the drill. We aren't trying to be something we're not. We are just a restaurant in an old part of town trying to serve decent food. Sometimes the plumbing acts up or the lights flicker because it's an old structure, but that’s just part of being in Fort. We just deal with it and keep the doors open for whoever walks in. It’s a bit of a squeeze during lunch, but we manage.
