Kapil Dabeli Centre

If you know Old Nagardas Road in Andheri East, you have probably seen our small setup. Kapil Dabeli Centre is just a simple spot on the side of the road. We do not have a big restaurant with tables or a fancy menu. It is mostly just the stand and the small space around it where we work. We start early in the morning getting the potato mix ready. The spices have to be just right, or the regular customers definitely notice the difference. Dabeli is what we know best. We spend hours toasting the buns and putting the pomegranate seeds and peanuts on top. It is a lot of repetitive work, but it keeps us busy and pays the bills. The road outside is always full of cars and people rushing to the station. It gets really hectic in the evenings when everyone is heading home from their jobs. That is usually our busiest time of the day. We do not use any fancy machines, just our hands and a hot tawa. Sometimes it is hard to keep up when ten people arrive at once. We have been at this spot for a good number of years now. The neighbors know us, and we recognize most of the regulars. It is a simple life. We make the food, people eat it, and then we pack up and go home. We are just trying to make a decent dabeli every single day for the neighborhood.
