Our kitchen is right on Mody Street, inside the Citzen Building at Gandhi Chowk. If you walk past during the morning, you can usually smell whatever we have bubbling on the big stoves. It gets very hot in there, especially when we have several big orders going at once. We handle a lot of the local events around this part of town. It is a lot of chopping, stirring, and making sure the supplies arrive on time from the market. We don't have a fancy dining room because we mostly cook and then pack everything up to go out. The building itself has been there a long time and everyone around Gandhi Chowk knows the spot. We have a few regular guys who help with the heavy lifting and the deliveries. It’s a bit of a scramble sometimes when a client calls last minute, but we try to manage. We use big pots and heavy pans, nothing like what you have in a normal home kitchen. It’s hard on the feet, standing there all day, but seeing the food go out looks right. We don't use fancy words for what we do, we just make food for people who need to eat at their parties or meetings. It is straightforward work and it keeps us on our toes from sunrise until late at night when the cleaning finally gets finished. We just keep our heads down and get the cooking done for the day.
