We've been at Suraj Eleganza II in Mahim for a bit now. It is on the 10th floor, so the view of the lane is alright. Dealing with barbecue can be a messy job, but we enjoy the process of getting the fire started. It’s mostly just us trying to keep things running every day. Pitambar Lane is usually busy, so getting stuff delivered up to the 10th floor is sometimes a challenge for the guys. We don't have a big fancy office, just a workspace where we figure out the day's tasks. Mostly, we spend time checking on supplies and making sure the grills are okay. Being in Mumbai, the humidity affects how the coal burns, which is something we had to learn the hard way. There are a few of us here, and we just try to get the work done without too much fuss. Sometimes the elevators are slow, but that’s life in a high-rise. We aren't trying to change the world, just trying to make sure the food turns out fine. It's a lot of manual work, honestly. People think barbecue is easy, but it takes a lot of standing around and watching temperatures. We’ve had some long days here on Bhagoji Keer Marg, especially when the weather isn't helping. It’s a small operation, really. We just keep our heads down and focus on what’s in front of us. We’ve been here for quite a while and plan to stay.
