Gourmet Kitchen

Gourmet Kitchen is a small food business located in Khar West on Koregaon Park Lane. In this part of Mumbai, space is very hard to come by, so our kitchen is quite small and compact. We don't have a lot of room for customers to sit and eat, so we mostly do takeaway and delivery. The lane outside is narrow and there is always some kind of traffic or noise. We start our work very early, often before the sun is up, to get everything ready for the day. The smells of the cooking go out into the street pretty quickly. There are just a few of us working here, and we handle everything from the cooking to the packing. We don't have a corporate structure or managers in suits. We get our ingredients from the local markets every morning to make sure things are fresh. Sometimes we have to tell people we are sold out of certain dishes because we only make a limited amount each day. The kitchen gets very hot during the lunch and dinner rush. We usually have a small fan and a radio to keep us company while we work. We have been in this spot for a few years and we know many of our neighbors. We don't use fancy boxes or logos. We just focus on the food and getting it out to the people who order from us.
