Global Fusion

We are tucked away in B/1 over here in Andheri East, right in the middle of all the office buildings. The mornings are mostly spent chopping vegetables and getting the kitchen ready for the lunch rush. It gets really crowded around one o’clock when everyone from the nearby blocks comes looking for a quick meal. The space isn’t very large, so things can get a bit tight when we have multiple orders going at once. We usually have the radio playing in the back while we work. The walls could probably use a fresh coat of paint, and the back door sticks sometimes when it’s humid out. It’s a lot of manual work, standing over the heat and making sure the plates are filled properly. We see the same faces every day, mostly people who work in the surrounding towers. When the rain starts, the entrance gets a bit slippery, so we have to put down old cardboard boxes to keep people from sliding. It’s not a glamorous job, just a lot of cooking and cleaning up afterwards. We close up once the dinner crowd thins out and the street lights come on. It’s just how we run things here in this part of Andheri, keeping it simple and making sure the kitchen stays busy until the very last order is gone. Most of the time we are just focused on the next order coming through the ticket machine.
