We are tucked away in Gazdar Scheme 3. Garcias Famous Pizza has been around this part of the neighborhood for a bit now. The oven is the heart of the whole place. It stays hot all day long, even in the summer when the humidity is high. I spend most of my shift throwing flour on the counter and rolling out the dough. It’s a messy job, and my apron is never clean for long. We get a lot of phone calls for delivery around dinner time. The bikes are always coming and going from the front of the shop. Gazdar Scheme 3 is a quiet enough area, but we stay busy. We don't have a lot of tables, so most people just take their boxes and head home to eat. My cousin helps out with the toppings. Sometimes we argue about how much cheese to put on, but we figure it out eventually. We don't use any fancy machines; we just do everything by hand. The sink is always full of dishes because we go through so many pans. It’s a simple business. We make the food, people eat it, and we do it again the next day. Sometimes the dough doesn't rise right and we have to start over from scratch. That's just part of it. We don't try to be anything we aren't, just a local shop making pizza.
