Flag'S-The World On Your Plate

We are located at B1 in the Amarchand Mansion at 16 Madam Cama Road in Colaba. Being in this part of Mumbai means we are surrounded by history and a lot of noise. Our place is on the ground floor, so we see everyone walking by on the sidewalk. It’s a restaurant, so the atmosphere is very different from a regular office. We spend most of our time in the kitchen or on the floor. There is always the sound of clinking plates and the smell of various dishes being prepared. We don't have a corporate structure. We are just a team of cooks, servers, and cleaners. We start our day early with the food deliveries and stay until the last customer leaves. It’s hard work and we are on our feet for most of it. The building is old and has a lot of character, though the plumbing can be a bit of a headache sometimes. We don't have a mission statement or a set of core values written down. We just focus on getting the food to the tables for our guests. We see tourists, office workers, and people who live in the neighborhood. Every day is a bit different depending on the crowd that comes in. We try to keep the place tidy, but when it’s busy, things can get a bit frantic. We enjoy the buzz of Colaba and being right in the middle of all the action on Madam Cama Road.
