You can find us over in Andheri West, right at the Chaar Khamba Chowk in the main market. It’s a loud area with people always walking past and the sounds of the market stalls nearby. We start things up early in the afternoon, getting the vegetables ready and making sure the burners are working. The kitchen gets hot pretty fast, especially when we have several orders going at once. It’s a small space so we have to move around each other carefully so nobody gets bumped. We don’t have much in the way of decor, just the basic stuff you need to cook and serve people who are in a hurry. Most of our regulars come from the nearby shops or people heading home after work. The main market area stays busy until quite late, so we are often here finishing up cleaning the floors and the counters long after the sun goes down. Sometimes the smell of the spices gets quite strong but we’re used to it by now. We spend a lot of time just chopping and prepping so everything is ready when the evening rush starts. It’s hard work on your feet all day, but it’s what we know. The chowk is always full of life and there is never a dull moment looking out at the street. We just try to get the food out quickly and keep the place tidy enough for the next day.
