We operate out of Khaushe House on 20th Road in Khar. It’s unit 1/2 in the Dhanpada area. If you know Khar, you know these streets can be a bit narrow and confusing for some people. We’ve been here for a long time, though. The building has that old Mumbai character. In the mornings, it’s always a bit of a scramble getting the supplies in. We do all our prep work right here. The kitchen is the heart of the place, obviously. There’s always someone chopping something or checking the ovens. It smells like spices and fresh cooking most of the day. We don’t have a storefront where you sit down to eat. It’s more of a production space for our catering orders. The staff has their own ways of doing things, and we don't change the routine much. It works for us. Khar is a busy place, and 20th Road stays active until late at night. We see the same delivery drivers every day. Sometimes the monsoon rains make the road outside a bit messy, but we manage to keep everything running inside. We just focus on the orders we have for the day. It’s a lot of standing on your feet and making sure everything is boxed up and ready on time. We don't really bother with fancy marketing or anything like that. People just know where we are and what we do.
