Our base is at Plot Number 14 in the Indira Nagar hutments area, right on Haji Bunder Road. It’s a ground floor spot in a part of Mumbai that is always moving. If you’ve been down towards the docks, you know the area—it’s full of trucks and workers. We provide food services from here, which means our kitchen is usually going from early morning. It’s not a polished corporate kitchen with shiny chrome everywhere. It’s a real, working space where we prep everything. The area can be quite dusty because of all the heavy vehicles on Haji Bunder Road, so we are constantly cleaning. We have a small crew of people who have been with us for a long time. It’s hard work, especially when the humidity hits and you’re standing over a stove. We don’t really do fancy menus; we just make food that people need. Sometimes the narrow lanes around Indira Nagar make it tricky for our delivery vans to get in, so we have to carry stuff out to the main road. It’s just the way things are here. We don't have a big office or a mission statement on the wall. We just focus on the cooking and making sure the food gets to the clients on time. It’s a basic, honest business run by people who know their way around a kitchen in a busy city.
