Our kitchen is tucked away in 303, Bali Residence, over in the Rathody area of Malad West. It’s near Green Village, which is a landmark most people in the locality know well. Being on Marve Road means we are always around the hustle of Mumbai, but our specific spot stays relatively calm. We spend a lot of time here preparing things and making sure the orders for Arnica Catering Services are ready on time. It gets quite warm in the back when all the stoves are going, but that is just part of the job. We have been doing this for a while now and have learned how to manage the kitchen even when things get a bit chaotic during the wedding season or festivals. There isn't a big fancy office here, just a practical space where the real work happens. You’ll usually find someone chopping vegetables or checking the stocks early in the morning. We try to stay focused on the tasks at hand and don’t really worry about having a polished look. The neighbors are used to the smells of cooking drifting out, and sometimes they pop their heads in to say hello. It’s a very local feel here in Malad. We take things one day at a time and try to get the food out as fresh as we can. It is hard work, standing on your feet for hours, but it’s what we do. No big secrets, just a lot of cooking.
