We are tucked away in Kareem Mansion over on Samuel Street. If you know Chinch Bandar, you know how it gets around here. It is always loud and there is always something moving on the road. We have been doing this for a while now. The kitchen is usually a bit of a mess in the mornings when the prep starts, but that is just how it goes when you are cooking for a lot of people. It gets hot, especially during the summer months, but nobody really complains much because we are used to the rhythm of the place. We just focus on getting the food right and making sure the containers are packed up before the delivery guys show up. We don't have a fancy office or anything like that. It is just a workspace with a lot of big pots and pans and people moving quickly to get things done. Sometimes the traffic on Samuel Street makes it hard to get the vans out on time, so we have to start earlier than most people would like. It is just life in this part of town. We stay busy and we keep the stoves going. It is not always pretty and it is definitely not quiet, but we have our way of doing things and it works for us. Most days we are just tired by the end of it, but we show up again the next morning to do it all over again at Kareem Mansion. We just keep our heads down and cook.
