Our place, Nirmal Bhoj, is right there at Sardhana Chowk in Meerut, just across from the Gayatri Heights apartments. Being on the National Highway 58 means we see a lot of different faces every single day. Some people are just passing through on their way to somewhere else, while others live right here in the commercial park area and come in for their daily lunch. The kitchen stays pretty busy from morning until late evening. It is not a very quiet spot because of all the traffic outside, but we like the noise. It feels like things are moving. We mostly focus on making meals that fill you up without costing too much money. You can usually find one of us standing near the front, keeping an eye on the service or chatting with the regulars who have been coming here since we opened. Sometimes the power goes out or it gets a bit crowded during the afternoon rush, but we manage to get the plates out. We don’t use any fancy machines, just traditional stoves and a lot of manual work. The menu doesn't change much because people know what they like and they keep coming back for it. We think it’s better to do a few things well than to try and be everything to everyone. It’s just a simple eating house for simple people. We keep the floor swept and the water jugs full, and that seems to be enough for most.
