True Plate Kitchens Private Limited is over in the Mahanagar area of Lucknow. We are located at C-32, E Park. It’s a nice enough part of town, and being near the park is a bonus when we need a break from the heat of the kitchen. Running a kitchen business is mostly about timing. Everything has to happen at once, and if one thing goes wrong, the whole day feels like a disaster. We spend a lot of time prepping ingredients and making sure the orders are going out to the right places. The space we have is okay, but we’re already starting to feel a bit cramped with all the equipment. It’s just a small group of us working here. We aren't chefs from some TV show, just regular people who know how to cook and want to run a decent business. Some days the sink gets clogged or we run out of gas, and we have to fix it on the fly. It’s a lot of manual labor and standing on your feet for ten hours a day. We don't have a marketing department or a fancy website. We just focus on the food and hope people like what we’re doing. Lucknow is a competitive place for food, but we think we’re holding our own. It’s just about showing up every day and doing the work.
