Tajine Food Van

Our little food van is parked in the service lane near Neel Giri Chauraha in Indira Nagar. Specifically, we’re located near Babian inn & Restaurants at Lucknow - 226016. It’s not a fancy building with a lobby or anything like that. Tajine Food Van is basically a kitchen on wheels. We set up every day and get the stove going. It’s a small space, so things can get pretty cramped when we have two or three people working inside. We deal with the weather every day—if it rains, we have to adjust, and if it’s hot, it’s even hotter inside the van. But we like the direct contact we have with everyone who walks up to the window. You get to know the regulars who stop by after work or during their lunch breaks. We don't have a lot of fluff in our menu or how we talk. We just cook the food and hand it over. Sometimes the generator is a bit loud, and we might run out of something if it's a busy night, but that's the nature of a food van. We try to keep our little spot in the service lane clean and welcoming for anyone passing by. It’s a simple business, just us and the van, trying to serve something decent to the neighborhood. We’ve been here for a bit now, and we’ve gotten used to the rhythm of the traffic passing by.
